- Fine Grinding: Removes burrs left by coarse grinding and smooths the edge. Recommended for regular weekly maintenance of kitchen knives.
- Polishing: Finishes the blade after fine grinding, removing tiny remaining burrs for a sharper, brighter edge. Note: polishing is not suitable for ceramic knives.
